washed rind sweetheart

the washed rind cheese is turning into a real sweetheart – its surface keeps mellowing daily – orangey rind with the white p. candidum just hanging on in the cracks – great patina – so it’ll be very interesting how this one tastes – because if its a knock out – (and i think its gonna be) – then it deserves its own place in the line up – or maybe its the real Hay Judes – we’ll see.
